3 Tablespoons Pompeian Organic Smooth Extra Virgin Olive Oil
4 large apples, cored and thinly sliced
1 teaspoon cinnamon
3 Tablespoons brown sugar (substitute maple syrup)
1 teaspoon vanilla extract
4 cups cooked quinoa (substitute farro, brown rice, or millet)
½ cup sliced almonds
- Add the Pompeian Organic Smooth Extra Virgin Olive Oil to a skillet over medium heat. When the oil is shimmering, add the apples.
- Sauté the apples for 3 minutes, or until they’re becoming tender. Reduce the heat to low and add the cinnamon, sugar, vanilla and salt. Continue to cook the apples, stirring gently so as not to break them, for 3 more minutes, or until some pieces are turning lightly golden and all are tender, but not mushy. Remove the apples from heat.
- Warm the grains in the microwave or in a sauce pot. Divide the grains into four bowls. Top each with a quarter of the apples and two tablespoons of the almonds. Serve right away.
