INGREDIENTS
1/3 c feta, crumbled
1 egg
1 teaspoon black pepper
1 Tablespoon sred pepper flakes
1 Tablespoon Pompeian Squeeze Robust Extra Virgin Olive Oil
1 tortilla
Toppings of choice (ex. guacamole)
PREPARATION
- Heat a small nonstick skillet over medium heat. Crumble feta into the warmed skillet.
- Immediately crack an egg into the center and season with black pepper and red pepper flakes.
- Drizzle with olive oil.
- Allow to cook (quickly), reducing heat if necessary, until white is set, yolk is still runny, and cheese is crispy.
- Serve atop tortilla with desired additional info (ex, featured guacamole).
