From cleaning and pressing hundreds of thousands of olives a day to maintaining operations at our mills, our passionate people have honed and perfected their craft over many years.
Our hands-on (and nose-forward) approach ensures that every olive that goes into a bottle of Pompeian is picked at the very peak of freshness and pressed at state-of-the-art mills, under the careful eyes of our master tasters and blenders.
We firmly believe in farm-to-table olive oil. All farmer-crafted Pompeian EVOO is “First Cold Pressed,” which involves taking our freshly picked olives to the mill, where huge stone wheels or a stainless steel crusher grind the olive flesh and pits into a smooth, homogeneous paste at a low temperature to preserve the quality of the olive oil.
This releases a mixture of oil and water when pressed. The water is removed by centrifugal force, yielding a fresh, authentic EVOO.
Because the oil is of the highest quality and a natural “juice of olives,” it’s enhanced only by filtering in order to remove residual moisture and unwanted small particles of olive flesh or pit. Thanks to these efforts overseeing every step of this ancient craft, you can be sure that every bottle of Pompeian will deliver the taste and quality to help you Eat and Live Well.

Pompeian olive oils carry the Non-GMO Project Verified Seal and the North American Olive Oil Association (NAOOA) Seal. NAOOA conducts the nation’s most exhaustive olive oil tests in the United States, purchasing olive oil from various supermarkets several times a year to ensure they meet the high standard of quality established by the International Olive Council (IOC).




Additionally, Pompeian has achieved three certifications from the International Organization for Standardization (ISO) – ISO 9001, ISO 14001, and ISO 22005. These ensure effective quality processes, environmental management, and full traceability in the food chain.
