1 12 ounce package of gluten-free pasta

2 lemons

¼ cup Pompeian Organic Robust Extra Virgin Olive Oil

¼ cup fresh Basil, chopped

1 large english cucumber, sliced

1 cup organic mixed cherry tomatoes, sliced in half

⅔ cup mixed olives, pitted

1 12 ounce jar of marinated artichokes

½ cup crumbled feta cheese, plus more for garnish

Fresh cracked pepper, to taste


  1. Cook pasta according to package instructions.
  2. Drain and rinse the pasta with cold water. Season the pasta with Pompeian Organic Robust Extra Virgin Olive Oil, lemon, basil, and pepper.
  3. Add the remaining ingredients to the pasta and store in an airtight container until ready to enjoy!
