3 Tablespoons Pompeian Organic Robust Extra Virgin Olive Oil, plus more for serving

1 cup frozen sweet peas, thawed

2 Tablespoons tahini paste

2 Tablespoons fresh lemon juice

2 teaspoons white wine vinegar

1 garlic clove

½ teaspoon crushed red chili

½ teaspoon sea salt

4 mini pitas or flatbreads, toasted

Pickled red onion and microgreens for garnish

preparation

  1. To make the hummus, put the Pompeian Organic Robust Extra Virgin Olive Oil, peas, tahini, lemon juice, vinegar, garlic, chili and salt in a food processor. Pulse to form a puree.
  2. To serve, spread the hummus on toasted pita bread. Sprinkle some red onion and microgreens over the hummus and top off with additional Pompeian Organic Robust Extra Virgin Olive Oil.
