INGREDIENTS
2 1/4 cups all-purpose flour
1/2 teaspoon fine sea salt or table salt
3/4 cup Pompeian Made Easy Bake olive oil
1/2 cup warm water
Filling ingredients:
6 tablespoons melted butter
1 cup packed light brown sugar
2 Tablespoons flour
2/3 cup pure maple syrup
1/2 teaspoon salt
3 large eggs
1/4 teaspoon maple extract OR 1 teaspoon vanilla extract
2 cups chopped pecans
PREPARATION
- In a medium mixing bowl, stir together flour and salt. Add olive oil and water and mix quickly with a rubber spatula until it all comes together in a ball.
- Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 400 degrees.
- On a lightly floured surface, roll out the dough (this makes 2 8 inch pie crusts)
- Press into a pie pan
- Bake crust in preheated oven for 15 to 18 minutes, until lightly browned. And set aside
- In a medium mixing bowl add brown sugar, eggs, vanilla, maple syrup, sat, flour and whisk well.
- Add melted butter and whisk until well combined
- Fold in chopped pecans.
- Add mixture into cooled pie crust and lower oven to 350
- Bake for 45-60 minutes or until the center has only a slight jiggle. Allow to cool before cutting!
