THERE'S LOTS OF WISDOM TO BE FOUND IN ÁLVARO'S PERSONAL MOTTO: “It's better to harvest a new crop than cry for the one lost." An olive farmer for over 20 years, Álvaro knocks on wood for good luck each morning before leaving his house and heading out to the fields.

ÁLVARO DESCRIBES A PERFECT DAY AS
one “where the climate matches the season: when it's hot in the summer, cold in the winter, and rains in the spring." No matter the season, his days are brightened by the stories shared by the other local farmers as they work alongside one another. Nothing makes him prouder than when all their hard work pays off, culminating in a bountiful harvest.
Álvaro greatly enjoys the company of his fellow farmers, but at the end of each day, once every task is accomplished, he relishes in relaxing in the silence of the field and watching the clouds go by.
