2 Tablespoons Pompeian Smooth Extra Virgin Olive Oil

2 cups of corn

1 1/2 cups black beans

Variety of bell peppers

1/2 cup chopped white onion

1/4 cup chopped jalapeño

1 teaspoon garlic

1 cup of tomatoes

1 tsp cilantro

For the dressing

2 Tablespoons Pompeian Robust Extra Virgin Olive Oil

1/2 lime, juiced

Dash of chili powder

preparation

  1. Use Pompeian Smooth Extra Virgin Olive Oil to sauté corn.
  2. Add in fresh vegetables with the cooked corn.
  3. To make the dressing, combine the Pompeian Robust Extra Virgin Olive Oil with fresh lime juice and a dash of chili powder.
  4. Combine the salad base and the dressing.
