1/3 c feta, crumbled
1 egg
1 teaspoon black pepper
1 Tablespoon sred pepper flakes
1 Tablespoon Pompeian Robust Extra Virgin Olive Oil
1 tortilla
Toppings of choice (ex. guacamole)


  1. Heat a small nonstick skillet over medium heat. Crumble feta into the warmed skillet.
  2. Immediately crack an egg into the center and season with black pepper and red pepper flakes.
  3. Drizzle with olive oil.
  4. Allow to cook (quickly), reducing heat if necessary, until white is set, yolk is still runny, and cheese is crispy.
  5. Serve atop tortilla with desired additional info (ex, featured guacamole).
