1 pound asparagus, stalks trimmed

2 Tablespoons Pompeian Robust Extra Virgin Olive Oil, divided

Salt and pepper

1 pound grape tomatoes, sliced

1/4 cup fresh basil, chopped

2 garlic cloves

Grated parmesan cheese

preparation

  1. Marinate the tomatoes for at least one hour with 1 Tablespoon Pompeian Robust Extra Virgin Olive Oil, garlic and basil.
  2. Toss the asparagus in 1 Tablespoon Pompeian Robust Extra Virgin Olive Oil and season with salt and pepper.
  3. Grill over medium heat for 2 – 3 minutes.
  4. Top with tomatoes and basil and freshly grated parmesan.
