3 Tablespoons Pompeian Organic Robust Extra Virgin Olive Oil, plus more for serving
1 cup frozen sweet peas, thawed
2 Tablespoons tahini paste
2 Tablespoons fresh lemon juice
2 teaspoons white wine vinegar
1 garlic clove
½ teaspoon crushed red chili
½ teaspoon sea salt
4 mini pitas or flatbreads, toasted
Pickled red onion and microgreens for garnish
preparation
- To make the hummus, put the Pompeian Organic Robust Extra Virgin Olive Oil, peas, tahini, lemon juice, vinegar, garlic, chili and salt in a food processor. Pulse to form a puree.
- To serve, spread the hummus on toasted pita bread. Sprinkle some red onion and microgreens over the hummus and top off with additional Pompeian Organic Robust Extra Virgin Olive Oil.
