INGREDIENTS
For the feta:
1 1/4 cups feta cheese
2 Tablespoons Pompeian Robust Extra Virgin Olive Oil
1/4 cup plain Greek yogurt
1 Tablespoon lemon juice
1-2 teaspoon honey
Pinch of sea salt and pepper, to taste
For the scallions:
1/4 cup Pompeian Robust Extra Virgin Olive Oil
6 garlic cloves, diced
1 1/2 teaspoon chili flakes
1/2 teaspoon sea salt
1/2 teaspoon pepper
For serving:
Pita
Chips
PREPARATION
- Combine all the feta ingredients in a food processor, until smooth. Pour the mixture into a bowl, smoothing out the top. Cover with wrap and place in the fridge until you’re close to wanting to serve the dip.
- When ready to make the dip, chop the green onions and garlic cloves finely. Add to a small bowl with the seasonings.
- Heat the Pompeian Robust Extra Virgin Olive Oil in a small sauce pan until it’s lightly boiling.
- Add in the onion, garlic, and seasonings and stir for a few seconds. Remove from the heat.
- Pour scallion mixture over the feta.
- Serve with chips, pita, or your favorite bread and enjoy!
