1/3 cup cilantro

1 Tablespoon chives, minced

4 garlic cloves, minced

1 teaspoon fresh thyme, minced

1 Fresno chili, seeded and minced

4 garlic cloves, minced

1/2 teaspoon salt

1/4 cup red wine vinegar

1/2 cup Pompeian Robust Extra Virgin Olive Oil

2 eggs, fried

1 1/2 lb. steak

preparation

  1. For the salsa verde, in a small bowl mix together the fresh herbs along with red wine vinegar and salt.
  2. Using a spoon slowly stir in the Pompeian Robust Extra Virgin Olive Oil until fully incorporated.
  3. Cook the steak in a large cast iron skillet until desired doneness, letting it rest until you’re ready to eat.
  4. In the same skillet, cook two eggs to serve with the steak.
  5. Serve the steak alongside the eggs and top with a healthy pour of the fresh Salsa Verde and a final drizzle of the Pompeian Robust Extra Virgin Olive Oil.Author: The Modern Proper
