INGREDIENTS
2 cups flour
2 teaspoon baking powder
1/2 v baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup Pompeian Smooth Extra Virgin Olive Oil
3/4 cup sugar
2 eggs
2 teaspoon vanilla
1/2 cup milk
3 cups apples (chopped, peeled, and cored)
For the Topping:
1/4 cup brown sugar
1 tsp cinnamon
PREPARATION
- Preheat oven to 350 degrees Fahrenheit and line a 8×8 inch square baking pan with parchment paper.
- Combine flour, baking powder, baking soda, salt, and cinnamon in a large bowl. Set aside.
- Whisk together the olive oil and sugar until the sugar fully dissolves.
- Add the eggs, one at a time. Then, add the vanilla. Whisk until fully combined.
- Add the wet ingredients to the dry ingredients. Fold until just combined with a rubber spatula.
- Chop, peel, and core three cups of apples (two medium-sized apples). Add two cups of the apples to the batter. Fold in with a rubber spatula.
- Pour the batter into the prepared pan. Top with the remaining one cup of apples.
- Combine brown sugar and cinnamon. Spoon it over the batter.
- Place the baking dish in the oven and bake for 45-50 minutes or until a toothpick comes out clean.
- Let the cake cool before slicing.
