For the Peanut Dressing

2 Tablespoons Pompeian Organic Robust Extra Virgin Olive Oil

¼- ½ cup all natural, no sugar added peanut butter

¼ cup Pompeian Organic White Wine Vinegar

¼ cup lime juice

2 Tablespoons honey

¼ cup soy sauce (use Tamari if gluten free)

1 teaspoon garlic powder

1 teaspoon ground ginger

1 teaspoon red pepper flakes

 

For the Chilled Noodles

½ lb. noodles of choice

1 (15 oz.) canned chickpeas, drained

1-2 cups shredded carrots

1-2 cups shredded coleslaw

1-2 cups whole red bell peppers, thinly sliced

¼ cup chopped cilantro

¼- ½ cup chopped salted peanuts

2 green onions, sliced

preparation

  1. Place all peanut dressing ingredients into a mason jar. Seal and shake until well combined. Set aside.
  2. Place noodles, chickpeas, carrots, coleslaw, peppers, cucumber, cilantro, peanuts, and green onions into a large bowl
  3. Toss with as much dressing as desired, cover and chill in fridge.
