Manuel lives for that special time of year
when the olive trees finally start bearing fruit. A farmer since 1970, his entire family is involved in agriculture: "My father patiently taught me how to work in the field and he guided me every step of the way. He's always been my favorite person to work with.”
improving his skills so that the olive trees continue to produce superior olive oil. As is so often the case, Manuel had to spend some time apart from the olive tree groves before he could fully appreciate the important role they play in his life.
"My top motivation in life is taking care of the trees so that they bear a lot of olives.” Manuel's favorite memories on the farm include the first days of harvest each year, when the olives are ripe and ready for picking. “I feel so much excitement…because the moment I’ve been waiting for all year has finally arrived."
