INGREDIENTS

2 cups flour
2 teaspoon baking powder
1/2 v baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup Pompeian Smooth Extra Virgin Olive Oil
3/4 cup sugar
2 eggs
2 teaspoon vanilla
1/2 cup milk
3 cups apples (chopped, peeled, and cored)

For the Topping:
1/4 cup brown sugar
1 tsp cinnamon

PREPARATION

  1. Preheat oven to 350 degrees Fahrenheit and line a 8×8 inch square baking pan with parchment paper.
  2. Combine flour, baking powder, baking soda, salt, and cinnamon in a large bowl. Set aside.
  3. Whisk together the olive oil and sugar until the sugar fully dissolves.
  4. Add the eggs, one at a time. Then, add the vanilla. Whisk until fully combined.
  5. Add the wet ingredients to the dry ingredients. Fold until just combined with a rubber spatula.
  6. Chop, peel, and core three cups of apples (two medium-sized apples). Add two cups of the apples to the batter. Fold in with a rubber spatula.
  7. Pour the batter into the prepared pan. Top with the remaining one cup of apples.
  8. Combine brown sugar and cinnamon. Spoon it over the batter.
  9. Place the baking dish in the oven and bake for 45-50 minutes or until a toothpick comes out clean.
  10. Let the cake cool before slicing.
