INGREDIENTS

1 cup flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Pompeian Smooth Extra Virgin Olive Oil
3/4 cup granulated sugar
1 egg
2 teaspoon vanilla
2/3 cup semisweet chocolate chips
2 cups white chocolate chips
4-6 marshmallows (large)
snowman decorating kit or candies

PREPARATION

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. Set aside.
  2. Combine flour, cocoa powder, baking soda, and salt in a large bowl. Set aside.
  3. Whisk together the olive oil and sugar until the sugar fully dissolves.
  4. Add the egg and vanilla. Whisk until fully combined and the mixture is smooth and thick.
  5. Add the wet ingredients to the dry ingredients. Fold until just combined with a rubber spatula.
  6. Add the chocolate chips and fold into the dough with a rubber spatula.
  7. Scoop cookies into equally sized dough balls – either 8 large cookies or 12 small cookies.
  8. Place onto the prepared baking sheet and into the oven. Bake for about 10 minutes for smaller cookies or 12 minutes for larger cookies.
  9. Once the cookies have cooled, melt the white chocolate chips in a microwave safe bowl in 20 second increments. Make sure to stir in between (this shouldn’t take more than a minute).
  10. Cut the large marshmallows in half and place one in the center of each cookie. Top the marshmallow with about 1 tbsp – 1 1/2 tbsp of white chocolate, covering the marshmallow and running down the sides of the cookie. Top with snowman decorations.
  11. Let the decorations set/harden before serving or storing.
