1 12 ounce package of gluten-free pasta
2 lemons
¼ cup Pompeian Organic Robust Extra Virgin Olive Oil
¼ cup fresh Basil, chopped
1 large english cucumber, sliced
1 cup organic mixed cherry tomatoes, sliced in half
⅔ cup mixed olives, pitted
1 12 ounce jar of marinated artichokes
½ cup crumbled feta cheese, plus more for garnish
Fresh cracked pepper, to taste
preparation
- Cook pasta according to package instructions.
- Drain and rinse the pasta with cold water. Season the pasta with Pompeian Organic Robust Extra Virgin Olive Oil, lemon, basil, and pepper.
- Add the remaining ingredients to the pasta and store in an airtight container until ready to enjoy!
