1 teaspoon fresh thyme, minced
1 Fresno chili, seeded and minced

1/4 cup red wine vinegar
1/2 cup Pompeian Robust Extra Virgin Olive Oil
2 eggs, fried
1 1/2 lb. steak

- For the salsa verde, in a small bowl mix together the fresh herbs along with red wine vinegar and salt.
- Using a spoon slowly stir in the Pompeian Robust Extra Virgin Olive Oil until fully incorporated.
- Cook the steak in a large cast iron skillet until desired doneness, letting it rest until you’re ready to eat.
- In the same skillet, cook two eggs to serve with the steak.
