INGREDIENTS

1 1/2 cups cherry tomatoes, cut in half
1 cup cucumber, diced
1/4 cup red onion, diced small
3 Tablespoons Pompeian Bold Extra Virgin Olive Oil 
4 large slices of whole wheat bread, cut in half
4 ounces soft goat cheese
1 Tablespoon honey
Salt and pepper to taste

PREPARATION

  1. In a large bowl mix tomatoes, cucumbers, red onion, and 2 Tablespoons of Pompeian Bold Extra Virgin Olive Oil.
  2. Toast bread and spread a heaping spoonful of goat cheese on each toast.
  3. Spoon tomato mixture over each toast, then drizzle with honey, the remaining EVOO, and salt and pepper.
