1 cup almonds

1 12 ounce jar roasted red peppers, drained

3 roma tomatoes, cut into fourths

1/4 cup Pompeian Bold Extra Virgin Olive Oil (plus more for roasting the tomatoes and to serve)

1/3 cup flat leaf parsley

2 cloves garlic

1 lemon, juiced

1 Tablespoon red wine vinegar

Kosher Salt

Fresh veggies to serve

preparation

  1. Preheat your oven on the highest broil setting. Place your tomatoes on a baking sheet and drizzle with Pompeian Bold Extra Virgin Olive Oil and salt.
  2. Broil for about 5 minutes then let cool. Remove the skins of the tomatoes.
  3. Blend all ingredients in a blender or food processor until the sauce reaches your desired consistency. Add more salt to taste.
  4. Serve with your fresh veggies, crackers and bread – drizzle with a healthy pour of EVOO!
