1 teaspoon salt
1 teaspoon ground black pepper
1.5 teaspoons Italian seasoning
3 Tablespoons Pompeian Mild Taste Olive Oil
3 carrots, chopped into small pieces
½ red onion, sliced
1.5 pounds boneless, skinless chicken breast
1.5 cup broccoli florets, chopped into small pieces
1.5 cups snap peas
1 cup sliced red pepper
2 cups rice
- Cook rice according to package directions.
- In a small bowl combine salt, pepper and Italian seasoning. Dice chicken into one-inch pieces. Season all sides with ⅓ of the seasoning mix.
- In a large/deep frying pan over medium heat, add olive oil, carrots, red onion ⅓ of the seasoning mix. Sauté for 4 minutes until starting to soften. Then add the chicken, broccoli, snap peas, red pepper and remaining seasoning mix. Continue to sauté for 8 minutes until veggies are soft and chicken is cooked through.
- Serve over rice with an additional drizzle of olive oil.
