INGREDIENTS
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, garlic powder
½ cup Made Easy Pompeian Bake Olive Oil
1 cup milk of choice
½ cup Greek yogurt
2 large eggs
1 cup cooked sausage
3 cups baby spinach
½ cup shredded cheese
½ cup shredded carrots (optional)
Extra Pompeian Bake olive oil to coat the pan
PREPARATION
- Heat Oven to 375°F.
- Coat a muffin pan generously with cooking spray; set aside.
- Whisk the flour, baking powder, baking soda, salt, pepper, garlic in a large bowl.
- Add the milk, yogurt and eggs, carrots, spinach, cheese, and sausage. Mix until just combined.
- Divide the batter; muffins will be very full.
- Bake until the tops just begin to brown and a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Run a thin knife around each muffin to loosen, then transfer to the rack. Enjoy warm!
