4-6 Zucchini cut in half and hollowed out.
1 can artichoke hearts, drained and chopped
1 package frozen chopped spinach, thawed, well-drained.
8 oz. cream cheese, softened
1 can chopped jalapeños, drained
1/2 cup shredded mozzarella, divided
1/2 cup grated Parmesan
1/4 cup sour cream
1/4 cup mayonnaise
2 cloves garlic, minced
Chopped fresh parsley, for garnish
Salt, pepper, Cajun seasoning to taste

  1. Mix all filling ingredients together in a large bowl until mixed well!
  2. Add the mixture into the cut zucchini on a parchment paper lined baking sheet.
  3. Drizzle with olive oil and Bake at 400 for 15-20 minutes (or until spinach has reached desired texture)
